This is an exciting chance to utilize your skills and experience in food service on the Alaska Railroad for the Summer 2018 Season!

Summary: Supervises and coordinates activities of onboard food service staff.

Essential Duties and Responsibilities include the following. Other duties may be assigned.

Human Resource Functions
  • Ensure all service expectations are met on a day to day basis
  • Ensure all uniform and grooming standards are met
  • Ensure scheduling is adhered to, manages daily changes to ensure coverage.
  • Stay overnight in Fairbanks and ensures that all staff maintain ESS standards while there
  • Initiates corrective and disciplinary action when necessary
  • Keep records and maintain paperwork of onboard service and events
  • Know and communicate all onboard position descriptions and duties
  • Zero tolerance for not adhering to policies and procedures including theft, use of alcohol or drugs onboard
  • Maintains ESS standard for diversity, and maintains an onboard culture of equality for all Associates
Financial Resource Function
  • Provide ongoing training and support for all daily financial functions
  • Enforce policies onboard regarding employee meals and consumption onboard
  • Utilize the POS System including troubleshooting of basic issues
  • Ensure the Safety and fully utilize Safety Program
  • Work with management team to ensure all daily safety reporting is accomplished
  • Work with management team on Accident investigation
  • Ensure adherence of all onboard staff to ESS safety programs and guidelines
  • Assist at depots and stops with the safe loading and unloading of passengers, assist physically challenged and special groups by opening doors, operating chair lift, etc. Provide assistance with crowd control.
  • Immediately notify management of any incidents onboard, no exceptions
Supervisory Responsibilities:
Directly supervises up to 15 employees. Carry out supervisory responsibilities in accordance with the ESS/AKRR policies, and all applicable laws.

Certificates, Licenses, Registrations
ServSafe or Alaska Food Workers' Card, TAPS

Education and/or Experience
Five years food service experience in a restaurant or banquet setting, with two years supervisory experience.

Language Skills
Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals
Ability to write routine reports/orders
Ability to speak effectively before customers

Mathematical Skills
Ability to add, subtract, and calculate figures and amounts such as discounts

Other Qualifications
Work long hours on moving railcar, travel 50%+ of the time.

Work Environment
The work environment characteristics described here are representative of those an employee encounters while performing the essential functions of this job. While performing the duties of this job, the employee is regularly exposed to moving mechanical parts, heat, motion, cleaning chemicals. The noise level in the work environment is moderately loud.

  • Assist in final selection of team members
  • Ensure all service expectations are met on a day to day basis
  • Ride trains frequently to insure all expectations are being delivered. Interface with On-Board Manager on all challenges and service lapses
  • Ensure all uniform and grooming standards are met
  • Ensure scheduling is adhered to, manages daily changes to insure coverage
  • Work with management team in the opening orientation and training
  • Occasionally stays overnight in Fairbanks to insure all ESS Policies on Bunk House Rules are adhered to
Financial Resource Functions
  • Effectively utilizes Microsoft Word, Excel and QuickBooks
  • Effectively utilizes POS System and troubleshooting
  • Assist in the daily cash reporting functions
  • Issue daily banks and insures accuracy
  • Oversee night stocking to meet quality, par, time requirements
  • Frequently rides trains to insure proper cash handling and trip end reporting
Food and Beverage Functions
  • Frequently rides trains to insure all recipes and plating are according to set expectations
  • Work with Culinary Advisor in initial management of stockers to insure adherence to schedule
  • Assists Culinary Advisor in daily and weekly food ordering
